These easy muffins can be made ahead of time, frozen, and then thawed when ready to eat.
Mix wet ingredients together.
In a separate large bowl, mix dry ingredients.
Combine dry and wet ingredients and stir gently.
Spray mini muffin/cupcake tin with nonstick cooking spray. Pour in tablespoons of batter directly into tins.
Bake at 400 degrees for 9-10 minutes.
